How to make Bread sauce 2
No roast is complete without this delicious side dish.

500ml milk
5 black peppercorns
bay leaf
1 small onion
6 cloves
200g fresh breadcrumbs

1. In a pan, heat 500ml milk with 5 black peppercorns, a bay leaf, a good grating of nutmeg and 1 small onion, peeled, halved and studded with 6 cloves.

2. Bring almost to the boil, then set aside to infuse for 10 minutes. Strain the milk into a jug and discard the aromatics, then clean the pan and return the milk to it.

3. Stir in 200g fresh breadcrumbs and season well. Simmer until thickened. Stir in a knob of butter and season to taste before serving.
