  1. Roasted chicken legs with a whole bunch of garlic:

This roast chicken recipe can benefit from a night of marinating the chicken in salt and chilling it so the skin can dry up a bit. This will result in the chicken having a wonderful golden finish on the outside.

Ingredients:

Serves 4

  • thighs and drumsticks (approximately 212 lbs) of chicken
  • kosher salt
  • garlic cloves cut in half crosswise
  • Thinly cut lemon rounds with the seeds removed
  • Quartered red chile (such as Fresno), seeds removed if wanted
  • 5 sprigs of thyme or 5 bay leaves
  • Freshly ground black pepper
  • ½ cup extra virgin olive oil
  • Toasted country-style bread to serve

Preparation:

Preheat the oven to 325 degrees Fahrenheit. Place the chicken in a 13x9-inch baking dish and sprinkle generously with salt. A couple of grinds of black pepper and a good amount of garlic will round off the dish. Add oil to coat. Sliced-side down, place garlic heads in the baking dish so that they are in touch with it which will help them give a nice brown color overall.

Roast chicken, rotating pan once, for 75–90 minutes, or until meat is coming off the bone nicely. Then, serve the chicken with bread once it has cooled in the pan for 10 minutes and enjoy!

  1. Grand aioli:

Ingredients:

  • Kosher salt
  • 3 large eggs
  • 4 large egg yolks
  • 3 cloves garlic
  • 2 tablespoons of fresh lime juice
  • 1 teaspoon Dijon mustard
  • 1 cup grape-seed oil
  • 1 cup olive oil

Method:

Finely chop the garlic in a food processor. Season with salt and blend in a mixer. Add egg yolks; add lemon juice, mustard, and salt. Incorporate a few drops of grape-seed oil at a time, while the motor is running. Then, using a rubber spatula, scrape down the sides of the bowl. Furthermore, add grape-seed oil and olive oil until they are blended. To thin out the sauce if it is overly thick, add 1 tablespoon of water at a time. It's important to taste the dish before adding more salt and lemon juice if necessary.

Transfer the aioli to a serving bowl and serve immediately with chips. Or, on a platter, arrange the following: potatoes, green beans with shrimp, halved eggs with endive, romaine, radishes, and cucumbers to complete the dish.

  1. Garlic and rosemary roasted potatoes:

Rosemary's woody aroma is so distinctive that it cannot be mistaken for any other herb. A few sprigs of rosemary and a few cloves of garlic combine to make roasted potatoes that are perfect for a winter night.

Ingredients:

  • 2 pounds peeled and sliced into 1-inch-thick wedges, medium cooking potatoes
  • 3 tsp Olive oil
  • 5 to 6 large (about 5 inches long) rosemary leaves
  • 4 big peeled and crushed garlic cloves

Method:

Prepare a sturdy 4-sided sheet pan in the upper third of the oven and preheat it to 450°F.

All ingredients should be mixed together along with salt and pepper to taste. On a heated pan, spread in a single layer and roast for 20 minutes. Separate the potatoes and turn them, placing pale potatoes around the pan's outer edge and golden ones in its center with a metal spatula in order to roast it perfectly even on both sides. Turn the potatoes over after 15 minutes of roasting, then separate the potatoes and turn them over again. For about 10 minutes more, roast potatoes until they are golden brown and cooked thoroughly and the edges are crisp.

  1. Garlic fried rice:

Ingredients:

  • 8 cloves of garlic, thinly shaved
  • a third cup of grape-seed or other vegetable oil
  • Kosher salt
  • 2 pieces peeled and finely chopped ginger
  • 1 large egg, beaten
  • 1 large egg, beaten
  • 3 cups of cooled, short-grain rice
  • Toasted sesame oil, about 2 tablespoons
  • 4 onions cut into thin diagonal slices.
  • 3/4 of a cup of cilantro that has been finely chopped
  • 2 tbsp sesame seeds toasted

Method:

In a large nonstick skillet, combine the garlic and grape-seed oil and cook until golden, about 5 minutes. Garlic should be arranged in a single layer on medium heat. After about 5 minutes of stirring and shaking, the garlic should be barely brown and crisp. At this point make sure the oil has stopped bubbling. To drain, use a slotted spoon to transfer garlic chips to paper towels.

On medium-high heat, sauté ginger with oil, stirring regularly, for about 2 minutes until just softened and aromatic. Bring to a boil; add the egg and stir to break it up. Rice and sesame oil can be added at this point. Continue to cook the rice for about 2 minutes, pressing down on it with a spatula to make sure it has excellent contact with the pan. Press down again on the rice, and then toss it one more. Cook until you get more crispy bits, around two minutes. Stir in the scallions and half of the garlic chips, then season with salt.

Sprinkle cilantro, sesame seeds, and the leftover garlic chips on top of the fried rice, serve hot and enjoy!
