  • 3 large eggs
  • 4 large egg yolks
  • 3 cloves garlic

  • 1 cup olive oil

Method:

Finely chop the garlic in a food processor. Season with salt and blend in a mixer. Add egg yolks; add lemon juice, mustard, and salt. Incorporate a few drops of grape-seed oil at a time, while the motor is running. Then, using a rubber spatula, scrape down the sides of the bowl. Furthermore, add grape-seed oil and olive oil until they are blended. To thin out the sauce if it is overly thick, add 1 tablespoon of water at a time. It's important to taste the dish before adding more salt and lemon juice if necessary.

All ingredients should be mixed together along with salt and pepper to taste. On a heated pan, spread in a single layer and roast for 20 minutes. Separate the potatoes and turn them, placing pale potatoes around the pan's outer edge and golden ones in its center with a metal spatula in order to roast it perfectly even on both sides. Turn the potatoes over after 15 minutes of roasting, then separate the potatoes and turn them over again. For about 10 minutes more, roast potatoes until they are golden brown and cooked thoroughly and the edges are crisp.

  1. Garlic fried rice:

Ingredients:

  • 8 cloves of garlic, thinly shaved
  • a third cup of grape-seed or other vegetable oil
  • Kosher salt
  • 2 pieces peeled and finely chopped ginger
  • 1 large egg, beaten
  • 1 large egg, beaten
  • 3 cups of cooled, short-grain rice
  • Toasted sesame oil, about 2 tablespoons
  • 4 onions cut into thin diagonal slices.
  • 3/4 of a cup of cilantro that has been finely chopped

Method:

On medium-high heat, sauté ginger with oil, stirring regularly, for about 2 minutes until just softened and aromatic. Bring to a boil; add the egg and stir to break it up. Rice and sesame oil can be added at this point. Continue to cook the rice for about 2 minutes, pressing down on it with a spatula to make sure it has excellent contact with the pan. Press down again on the rice, and then toss it one more. Cook until you get more crispy bits, around two minutes. Stir in the scallions and half of the garlic chips, then season with salt.

Sprinkle cilantro, sesame seeds, and the leftover garlic chips on top of the fried rice, serve hot and enjoy!
